large sheet (18 heavy duty foil

4 cups broccoli florets

2 1/2 cups cauliflowerets

1 pint cherry tomatoes (can use Roma tomatoes cut into fourths, about 5 large ones)

1/4 cup pitted & sliced ripe olives

1 tablespoon fresh, chopped oregano or 1 1/2 tsp. dried oregano)

salt and pepper to taste

2 ice cubes

1/4 cup crumbled feta cheese (or any kind of cheese you like)

Instructions: Preheat oven to 450 degrees or grill to medium high. Place all vegetables and olives in center of foil.

Sprinkle with oregano, salt and pepper. Top with ice cubes. Seal foil, leaving room for expansion, and for heat to circulate.

Bake 20-25 minutes in oven on cookie sheet (this is what I did) or grill for 12-14 minutes.

Sprinkle with cheese before serving.
